Move out the way Willy Wonka, these “Bloody” Sweet and Spicy Honey Sriracha chicken lollipops are all I want for Halloween when trick-or-treating!
To lollipop the chicken drumsticks, cut around the bone with kitchen shears, and pull the meat down toward the base of the bone to create a chicken “lollipop.”
For the honey sriracha glaze, I reduced the sauce ingredients down on the stovetop to a glaze and added a few drops of red food coloring to give the glaze a bold bloody Halloween look. Once the chicken was ready, I dipped each chicken lollipop in the sauce and cooked for another 10 minutes to let the glaze set.
Ingredients:
4 pounds Chicken Lollipop Drumsticks
Favorite Rub or Seasoning
Honey Sriracha
2 tablespoons oil
Chopped parsley, for garnish
Honey Sriracha Glaze Ingredients:
¼ cup unsalted butter
½ cup Sriracha sauce
⅓ cup honey
¼ cup ketchup
¼ cup Maggi seasoning or soy sauce
3 tablespoons rice vinegar
1 teaspoon black pepper
1 tablespoon red food coloring
Steps:
Prepare Chicken – Using kitchen shears, cut around the bone and clean away any excess cartilage or meat. Push the meat down toward the base of the bone to create a chicken “lollipop.” Lightly season the chicken lollipops with your favorite rub or seasoning, then refrigerate for a few hours.
BBQ Chicken Lollipops – Preheat your pellet grill to 375°F. Place the seasoned chicken lollipops on the grill and cook for about 45 minutes, or until the internal temperature reaches 170°F.
Make Honey Sriracha Glaze – In a small saucepan, melt the butter over medium heat. Add the remaining glaze ingredients and stir until the sugar dissolves. Bring the sauce to a simmer and let it reduce until it thickens into a glaze. Adjust the seasoning to taste, then transfer the glaze to an 8-ounce cup and set aside.
Finish Chicken Lollipops – Once the chicken lollipops reach an internal temperature of 170°F, dip each one into the honey sriracha glaze. Return them to the grill and cook for an additional 10 minutes to allow the glaze to set. Plate, garnish as desired, and serve hot.
Tips:
- Because you’re going to dip it in the glaze, just lightly season the wings before barbecuing.
- Honey Sriracha glaze works great on any bone-in chicken.
- You can sear the chicken before glazing for more color.
