Costco Rotisserie Chicken Copycat

I recently received the rotisserie accessory insert for the Masterbuilt Gravity Series 600 grill and HAD to find a copycat Costco Rotisserie Chicken recipe to make. Surprisingly I didn’t see too many copycat recipes but found one at mashed.com with all the seasonings I already have in my pantry…kosher salt, garlic powder, paprika, and ground black pepper.

The chicken was spinning at 350 degrees for about 2 hours until the internal temperature reached. The skin was crisp and the chicken was super juicy! I collected the drippings to add to my roasted potatoes and carrots. SO GOOD!

This BBQ chicken tasted a lot better than the Costco rotisserie chicken for sure, and I look forward to many more opportunities to use the rotisserie this summer!

Ingredients
1 5-pound whole chicken, trussed
1 tablespoon kosher salt
½ tablespoon garlic powder
½ tablespoon paprika
1 teaspoon ground black pepper

Steps:

Season Chicken – Season a cleaned trussed whole chicken with with salt, garlic powder, paprika, and black pepper evenly on the inside and outside of the chicken. Let the chicken sit in seasoning for at least four hours.

BBQ Rotisserie Chicken – Setup the grill/smoker and rotisserie insert to 350 degrees indirect BBQing. Skewer the chicken securely on the rotisserie spit and put it on the grill. Close the lid and BBQ the chicken at 350 degrees for 2 hours or until the internal temperature of the chicken breast reaches 165 degrees.

Tips:

  • Wear protective gloves. The rotisserie spit is really hot.
  • Place a pan of veggies under the chicken and let the drippings season the veggies while the chicken is spinning.
