Bánh Tằm Bì

Bánh Tằm Bì, Thick Rice Noodles with Shredded Pork, is the perfect Vietnamese noodle salad! I love it so much, but I don’t know why I don’t make it more often.

I loaded each Bánh Tằm Bì bowl with Mom’s bì (I will need to learn how to make), fresh veggies and herbs, pickled carrots and daikon, crunchy fried shallots and peanuts, and smothered with nuoc mam dipping sauce and coconut cream sauce.

The refreshing flavors and texture in the noodle salad, spicy and sweet fish sauce dipping sauce, and creaminess of the thick coconut cream sauce make this dish super unique and taste so good!

The thick bánh tằm noodles are usually made with rice and tapioca flour, but I couldn’t find it so used some Vietnamese banh canh noodles that look just as thick. Sometimes, I just use thick vermicelli noodles that are used for BBH.

Ingredients:
Banh Tam Rice Noodles or Thick Vermicelli Noodles
Bì, Shredded Pork Skin
Shredded cucumber
Pickled carrots and daikon
Roasted peanuts
Fried shallots
Nuoc Mam dipping sauce
Coconut cream sauce
Scallion oil

Coconut Cream Sauce Ingredients:
1 15-ounce can Coconut Cream
1 cup of water

1 tablespoon cornstarch, dissolved in a little bit of water

1 tablespoon sugar

1 teaspoon salt
1 green onion, chopped

Steps:

Make Coconut Cream Sauce – In a saucepan, bring coconut cream, water, sugar, salt to a boil and simmer for 5 minutes. Add cornstarch slurry to thicken up the sauce. Add chopped green onions, mix and set aside.

Make Bánh Tằm Bì Bowls – Assemble your bowls with a generous amount of thick rice noodles, Bì, greens of choice, sliced cucumber, pickled carrots and daikon, mint or perilla leaves, a healthy scoop of coconut cream sauce, crushed peanuts, and fried shallots. Pour nuoc mam sauce all over the Bánh Tằm Bì, mix it up, and enjoy.

Tips:

  • Bánh Tằm noodles can be hard to find. I used storebought banh canh noodles, but usually I would just make it with BBH Thick Vermicelli Noodles.
  • Add a cha gio for extra crunch!
  • Customize ingredients however you like. The options are endless.
