Spicy Thai Crab Fried Rice

My daughter Taylor is a huge fan of Thai Crab Fried Rice. Every time we go to our favorite Thai Restaurant, she orders this dish and loves the sweetness of the crab meat with the aromatic Thai spices and flavors in the dish

I recently made Spicy Thai Crab Fried Rice using the leftover Dungeness crab I saved from the Roasted Crab night. I also had Thai Basil and Bell Peppers in the fridge, so it felt great making this dish without having to go to the store!

This recipe is super versatile. You can use any proteins you have available and customize the veggies however you like. The key components are the aromatics, sauce, and Thai Basil!

Fried Rice Ingredients:
4 cups day-old Jasmine rice
1 pound crab meat
3 eggs
1/4 green bell pepper, chopped
1/4 red bell pepper, chopped
1/4 yellow onion, chopped
1 Roma tomato, chopped
1 handful of Thai Basil
5 garlic cloves, finely minced
2 Thai chili, finely minced
1 shallot, finely minced
2-3 tablespoons neutral oil for frying

Sauce Ingredients:
2 tablespoons oyster sauce
1.5 tablespoons fish sauce
1 tablespoon soy sauce
1/2 tablespoon sugar

Steps:

Make Sauce – In a small bowl whisk sauce ingredients until combined.

Make Fried Rice – Heat wok on Medium High and add neutral oil. Throw in the minced garlic and chilies mixture and stir fry for about one minute. Add veggies and cook for 3-4 minutes. Add rice, egg, and sauce, and cook for 3-4 minutes. Add cooked crab, tomato, and basil, and give fried rice a final mix. Garnish and serve.

Tips:

  • Substitute your favorite seafood or meats for crab.
  • Add more Thai chilies if you want it spicier, add less for more mild taste.
  • If you don’t have time to use day-old rice, cook a pot of rice and use less water to make it drier.
