XO Fried Rice

I alway love checking out new ingredients to use in my cooking. I was super excited to use XO sauce and made umami packed chicken fried rice with it.

The XO fried rice is loaded with chicken, Chinese sausage, asparagus, and mixed veggies. Fried rice is always a great way to get the girls to eat their veggies!

The XO sauce didn’t taste as salty as I initially thought, but I loved the pungent and intense flavors of the dried scallop and dried shrimp. If you love flavor bombs, this is for you. I can’t wait to find more ideas to use XO sauce. Yum!

Ingredients:
5 cups of Jasmine rice, day-old cold rice
12 ounces chicken thighs, cut into bite size
6 ounces Chinese sausage, sliced
6 ounces asparagus, cut into bite size
1/2 cup of frozen mixed vegetables
1/4 cup Lee Kum Kee XO sauce
4 eggs
1 tablespoon Maggi seasoning or soy sauce, more to taste
1 teaspoon salt
cilantro, finely minced (Optional)
Oil for frying

Steps:

Prepare Rice – In a medium/large bowl, mix 2 eggs, rice, and salt until rice is evenly coated. Set aside.

Prepare Protein – Heat large skillet over high heat. Pour in 1 tablespoon of vegetable oil into the skillet. Stir fry Chinese sausage for about 2 minutes. Add chicken and stir fry for about 3 minutes. Add in 2 eggs and quickly stirring to scramble for about 1 minute. Set the protein aside.

Make Fried Rice – Return large skillet over high heat. Pour in 2 tablespoons of vegetable oil to the skillet. Add rice stir fry until fluffy and cooked ~5 minutes. Stir in protein, asparagus, and frozen vegetables into the cooked rice and mix well until fully combined. Add XO sauce and drizzle in Maggi seasoning/soy sauce, and mix again until fully combined. Season to taste. Garnish with cilantro.

Tips:

  • Substitute your favorite veggies for asparagus.
  • Use any protein you like.
  • If you do not have day old/leftover rice, spread fresh hot rice evenly over a small sheet pan and put it in the freezer to cool it quicker.
