Vietnamese Grilled Pork Chops

After getting my new portable @webergrills Go-Anywhere charcoal grill, I had a sudden craving for Cơm Tấm Sườn Heo Nướng, Broken Rice with Grilled Pork Chops. The grill reminded me of getting Cơm Tấm in Vietnam where the ladies would pop a squat over a small grill, and grill up some of the most flavorful and tender pork chops for Cơm Tấm in the morning.

For this easy grilled pork chop recipe, I used my sweet and savory marinade that does not contain lemongrass. This is perfect for non lemongrass lovers who still want amazing Vietnamese flavors or just folks that don’t have lemongrass readily available. I pounded the garlic, shallots, and white part of green onions into a paste and it’s still super aromatic and delicious!

I also experimented with monk fruit sugar and used it as a substitute for sugar to cut some calories in the pork chops. It turned out good. The sugar you use is based on preference.

After grilling the pork chops, make rice plates and enjoy it however you like!

Ingredients:
2 pounds Thin Bone-In Pork Chops
8 Garlic cloves, minced
6 Green onions (white part), minced
1 shallot, minced
⅓ cup Fish Sauce
¼ cup Honey
2 tablespoons oyster sauce
2 tablespoons monk fruit sugar or sugar
1 tablespoon black pepper
¼ cup neutral oil

Scallion Oil Ingredients:
1 bunch of scallions, thinly sliced
2-3 tablespoons neutral oil
pinch of salt

Cơm Tấm Options:
Cơm Tấm, Broken Rice
Grilled Pork Chops
Over-easy egg
Sliced cucumber
Sliced tomato
Lettuce
Thai Chili
Fish Sauce Dipping Sauce
Scallion Oil
Fried Shallot

Steps:

Marinate Pork Chops – In an large bowl, whisk marinate ingredients together until combined. Add thinly sliced pork chop and mix well. Add oil on the top of marinated pork, cover with saran wrap and let the pork marinate at least a few hours, preferably overnight.

Grill Pork Chops – Set the grill to medium high – high heat. Once the grill is heated, grill pork directly over the open flames for about 3 minutes on each side, or until pork is completely cooked. Brush on scallion oil on top of grilled pork chops.

Tips:

  • This marinade is perfect for beef, chicken, and even shrimp.
  • Increase cooking time if using thicker cut of pork chops.
  • If you do not have a grill, you can pan-fry. Watch out for splatters.
