
his version of Chinese Sausage and Spam Fried Rice is so nostalgic for me and will always be one of my favorite ways to prepare and eat fried rice. Chinese Sausage and Spam are also my favorite proteins for fried rice!
In Elementary School, my Bà Cô (Mom’s aunt), watched my siblings, cousins, and me while our parents worked. After school, she often had a hot skillet of fresh red-colored fried rice loaded with just Chinese Sausage, Spam, and eggs ready for us to eat as soon as we all got home from school. This was always the perfect afterschool snack while watching Power Rangers before we started doing homework. To this day, she’d always bring a big tray to every family party and/or gathering for us to enjoy.
Ketchup was the ultimate condiment in every immigrant household in the 90’s. Heinz Ketchup and Best Foods Mayo were the only condiments we ever had in our house. We love and enjoy the sweet and tangy ketchup flavors on everything, especially this savory and delicious fried rice.
When there are big gaps between family parties and gatherings, I would make Bà Cô’s fried rice at home for my girls. It’s not exact, but very similar, and enough to satisfy my cravings until the next family party. I also add mixed veggies for health!
Ingredients:
5 cups of Jasmine rice, day-old cold rice
6 ounces Chinese Sausage, diced
6 ounces Spam, diced
1 cup frozen mixed vegetables
4 eggs
2 tablespoons ketchup
2 tablespoons Maggi seasoning or soy sauce
1 teaspoon salt
1 teaspoon sugar
½ teaspoon pepper
3 garlic cloves
Green onions, finely chopped
3-4 tablespoons cooking oil
Steps:
Prepare Rice – In a large bowl, break up day-old rice and loosen it up in the bowl. Mix rice, 2 eggs, salt, sugar, and pepper until rice is evenly coated. Set Aside.
Prepare Protein – Add Spam and Chinese Sausage to a cold skillet. Turn the heat to medium heat and cook protein for 5 minutes and let the fat render from the Chinese sausages. Add in 2 eggs and quickly stirring to scramble for about 1 minute. Set the protein aside.
Make Fried Rice – Add 2 tablespoons of oil to a hot skillet and begin stir frying rice for 5 minutes until rice is fluffy. Add Chinese Sausage, Spam, and mixed veggies, and continue to stir fry until all the ingredients are fully combined. Season with Maggi seasoning and Ketchup and give everything a final mix until fully combined.
Tips:
- If you do not have day old/leftover rice, spread fresh hot rice evenly over a small sheet pan and put it in the freezer to cool it quicker.
- Substitute 1 tablespoon tomato paste for ketchup if you don’t have ketchup.
- I like to coat rice with egg before frying to make the rice extra fluffy!
