
We are reaching the peak of grill season and you will catch me grillin’ and chillin’ outside regularly with the family. Grilled Lemongrass Pork Skewers, Thịt Xiên Nướng Sả, is one of my absolute favorite things to grill over direct heat, and on a Weber Kettle Charcoal Grill is a plus!
There’s nothing like the sweet, savory, aromatic, and fragrant sound, smell, and taste of these sizzling pork skewers over the grill.
After grilling and brushing with scallion oil, there are so many ways that you can enjoy these beauties. From rice plates to vermicelli bowls, tacos, spring rolls, and sandwiches, the options are endless. I was inspired by @gaovietkitchen Wrap & Roll and used Bánh ướt rice sheets to roll up the grilled pork and dip it in nước mắm dipping sauce. I bought the Bánh ướt from my local grocery store and flattened it out to form the sheets.
Ingredients:
3 pounds thinly sliced pork butt and/or belly, thinly sliced
½ cup honey
½ cup lemongrass, finely chopped
6 garlic cloves, minced
¼ cup oyster sauce
¼ cup fish sauce
¼ cup vegetable oil
2 tablespoons soy sauce
2 tablespoons granulated white sugar
2 tablespoons cup water
1 tablespoon ground black pepper
1 tablespoon Vietnamese caramel cooking sauce (optional)
1 tablespoon sesame oil
Scallion Oil Ingredients:
1 bunch of scallions, thinly sliced
2-3 tablespoons cooking oil
pinch of salt
Steps:
Marinate Pork – In an large bowl, whisk honey, oyster sauce, fish sauce, soy sauce, water, sugar, sesame oil, ground black pepper, and Vietnamese caramel cooking sauce together until combined. Add lemongrass and garlic and mix well. Add thinly sliced pork and mix well. Add oil on the top of marinated pork, cover with saran wrap and let the pork marinate overnight.
Skewer Pork – Thread the pork onto the skewers and set aside. Repeat until all the pork has been skewered.
Grill Pork Skewers – Set the grill to medium high – high heat. Once the grill is heated, grill pork directly over the open flames for about 4-5 minutes on each side, or until pork is completely cooked. Brush on scallion oil on top of grilled pork.
Tips:
- Soaking bamboo or wooden skewers in water for at least 30 minutes will prevent the skewers from burning too quickly during the grilling process.
- This marinade is perfect for beef, chicken, and even shrimp.
- If you do not have skewers, slice into bigger thin slices and grill directly over high heat.
- Lemongrass is very fibrous and can be hard to chop. If you have a local Asian Grocery store near, you can find pre-chopped lemongrass in the frozen section. It won’t be as fragrant as fresh chopped lemongrass, but it still works fine.
- If you don’t have caramel cooking sauce, you can substitute with molasses, thick soy sauce, or you can just leave it out. The caramel cooking sauce gives a darker and bolder color when it is grilled.
