
I usually don’t like to order chicken street tacos at the local taquerias because the chicken is prepared differently at every spot, the taste is not that good, and there are always other protein options I’d rather pick over chicken. But at home, when the chicken is prepared how I want it, that’s a totally different story.
This spicy and seasoned chipotle chicken is the perfect chicken for street tacos. The chopped chicken is ultra flavorful from the chipotle peppers in adobo and Mexican spices, meat is super moist and tender, and is the perfect protein on the mini corn tortillas. oh mannnn… If you want some chicken tacos. Chipotle Chicken Ingredients:
2 pounds boneless chicken thighs
4 chipotle peppers in adobo sauce, finely diced, more if you like it spicier
1 tablespoon chili powder
1 tablespoon oil
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1 teaspoon agave syrup or honey
1 teaspoon salt
1 teaspoon Mexican oregano
1 teaspoon cumin
1/2 teaspoon black pepper
1/2 lime, juiced
Extras:
Taqueria style mini corn tortillas
Chopped cilantro and onion
Lime wedges
Hot sauce
Steps:
Marinate Chicken – In a medium bowl, marinate chicken with chipotle puree, chili powder, oil, garlic powder, onion powder, salt, Mexican oregano, cumin, black pepper and lime juice in the fridge for at least an hour.
Sear Chicken – Sear boneless marinated chicken thighs over medium-high heat on a skillet for 4-5 minutes a side until a beautiful crust forms on each side of the chicken.
Prepare Tacos – Chop the chicken into bite size pieces and set it aside. Top each warmed corn tortilla with a few ounces of chopped chicken and garnish each taco with your favorite condiments.
Tips:
- Marinade works great on tofu, shrimp and fish!
- For an authentic Taqueria taco experience, lightly fry the tortillas on the chicken drippings for extra flavor.
