Mushroom Alfredo Pasta

Mushroom Alfredo pasta is one of my favorite side dishes that I love to make and share with family and friends during the holiday season. It is a crowd pleaser loved by everyone! The secret ingredient? Campbell’s® Condensed Cream of Mushroom Soup. This affordable 10-ounce can is packed with rich, umami flavor, so you can skip buying heavy cream and butter and it will still make the pasta ultra creamy and comforting with just a few additional pantry staples.

Ingredients:
2 cans (10.5 oz) Campbell’s® Condensed Cream of Mushroom Soup
1 16-ounce package penne pasta
2 cups milk or water
8 ounces cream cheese
1/2 cup grated Parmesan cheese, plus more for topping
8 ounces baby bella mushrooms, cleaned and quartered
5 ounces frozen peas
3 tablespoons unsalted butter
1 tablespoon minced garlic cloves
1 teaspoon Italian seasoning

Steps:

Cook Penne Pasta – Bring a large stockpot of water to a boil, generously seasoning it with salt. Add the penne pasta and cook until al dente, following the package instructions. Once cooked, drain the pasta and set it aside.

Cook Mushroom Alfredo Pasta – In a large skillet, melt butter over medium heat. Add the quartered mushrooms and saute for about 5 minutes, until the mushrooms have released their moisture and the liquid has evaporated. Stir in the garlic and saute for an additional 30 seconds. Scoop in Campbell’s® Condensed Cream of Mushroom Soup, stirring it into the mushrooms. Gradually pour in the milk and/or water, followed by the cream cheese. Stir gently until the sauce becomes smooth and creamy. Season with Italian seasoning and freshly grated Parmesan cheese, stirring until everything is well combined. Add the cooked penne pasta and peas to the skillet, tossing everything together until evenly coated in the mushroom Alfredo sauce. Transfer the Mushroom Alfredo to a baking dish. Sprinkle extra Parmesan cheese over the top of the pasta and broil for a few minutes for extra color. Serve Hot!

Tips:

  • If the sauce is too thick, add a little extra water to reach your desired consistency.
  • As a side dish, I love using penne or rigatoni and not fettuccine or linguine.
  • Protein and veggie options are super customizable!
  • Cream cheese added for extra richness.
