Thạch Rau Câu Thai Tea/Coffee Agar Jelly

Thạch Rau Câu Thai Tea/Coffee Agar Jelly Ingredients:
1 0.88 oz packet Agar-Agar Powder
Pantai Thai tea mix
Half and half
Instant coffee
Sugar
Salt

Thai Tea Agar-Agar Ingredients:
4 cups boiling water
1 1/4 cups Pantai Thai tea mix
1 cup of half and half
1 cup granulated sugar
5.5 teaspoons Agar-Agar powder

Coffee Agar-Agar Ingredients:
3 cups boiling water
4 teaspoons instant coffee
3/4 cup granulated sugar
4.5 teaspoons Agar-Agar powder

Steps:
Make Concentrated Thai Tea – Add Pantai Thai Tea mix and 2 cups of boiling water in a large measuring cup and mix well. Let the tea steep for 30 minutes. Strain and press the tea into another measuring cup to yield 1 cup of concentrated Thai Tea. Add 1 cup of half and half and mix well.

Make Thai Tea Agar-Agar – Add 5.5 teaspoons of agar-agar powder and 2 cups of water in a small saucepan and mix well. Let the liquid sit for 15 minutes at room temperature. Boil the liquid. As soon as the liquid bubbles, add 3/4 cup of sugar and stir to dissolve. Add concentrated Thai tea, stir, and mix well. Reduce heat down to the lowest setting. Stir occasionally until ready to use.

Make Concentrated Coffee – Add instant coffee to 1 cup of boiling water in a measuring cup and mix well.

Make Coffee Agar-Agar – Add 4.5 teaspoons of agar-agar powder and 3 cups of water in a small saucepan and mix well. Let the liquid sit for 15 minutes at room temperature. Boil the liquid. As soon as the liquid bubbles, add 3/4 cup of sugar and stir to dissolve. Add concentrated coffee, stir, and mix well. Reduce heat down to the lowest setting. Stir occasionally until ready to use.

Assemble the Agar-Agar Layers – Start with the Thai Tea layer and then the Coffee Layer, indirectly and gently pour 1 cup of agar-agar liquid (let drip over the back of spoon) into a 9×13 baking dish. After pouring each layer on the baking dish, let the agar-agar jelly set in the refrigerator for 3 minutes. When finished, refrigerate the agar-agar jelly for at least 4 hours preferably overnight.

  • Flavor combinations are endless!
  • Cut into shapes and sizes you like.
  • Add more instant coffee or tea depending on how strong you like it.
  • Contains lots of caffeine. Watch out for the little ones that are eating it.
