Mexican Rice in the Rice Cooker

I was experimenting with tomato bouillon and made Mexican-style rice in the rice cooker for my bean, cheese, and rice burritos.

The perfectly cooked Mexican rice was super easy to make. After sauteing the rice, I just threw everything in the rice cooker and let it do its thing. So easy and delicious!

My regular recipe calls for blended tomatoes and onions but using the bouillon was super convenient when I don’t have the fresh ingredients and need my rice fix.

Ingredients:
2 cups jasmine rice
4 cups water
1.5 tablespoons tomato bouillon
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
Cilantro stems

Steps:
SautĆ© the rice – Add neutral oil to a skillet.  SautĆ© rice over medium heat until the rice starts to brown.

Cook Rice in the Rice Cooker-
Add sautƩed rice, water, cilantro stems, and seasonings in the rice cooker and let it do its thing. When the rice is done cooking, fluff it up and serve with your favorite Mexican dishes.

Tips:

  • Add more or less water depending on your rice cooker and quality of the rice. It’s better to go with less rice and add more later as needed.
