Stir Fry Baby Bok Choy

I was looking for veggies to cook and the fresh and bright green Baby bok choy at the store caught my attention, so I decided to buy some to stir fry in garlic. After spending a few minutes prepping the baby bok choy, I cooked it up in less than 10 minutes. Super quick, nutritious, and delicious! It was the perfect side for my savory Vietnamese dishes.

Baby bok choy has a mild, slightly sweet flavor with a crisp, crunchy texture. I love that the leaves are tender and flavorful, while the stalks are crunchy and slightly peppery. The texture is great when cooked!

Ingredients:
1.5 pounds baby bok choy, washed and halved
8-10 garlic cloves, smashed
2 tablespoons cooking oil
½ teaspoon salt, more to taste
¼ teaspoon pepper
¼ teaspoon sugar

Steps:

Stir-fry Baby Bok Choy – Add smashed garlic and cooking oil to a cold skillet/wok. Heat a large skillet/wok on medium-high heat for about 3 minutes or until garlic begins to brown. Add baby bok choy and stir fry for about 3 more minutes or until the baby bok choy is tender, but still have a little crunch. Season the baby bok choy with salt, pepper, and sugar, and give it a final mix.

Tips:

  • If Baby Bok Choy aren’t available, other greens like pea sprouts, water spinach, spinach, or other leafy greens work great for it as well.
  • I like to start the garlic in a cold pan so it can soften and not burn too quick.
