Mì Hoành Thánh Xá Xíu, Egg Noodle Soup w/ Wontons and Roasted BBQ Pork

Mì Hoành Thánh Xá Xíu, Egg Noodle Soup w/ Wontons and Roasted BBQ Pork, is one of my favorite noodle soups of all time. I always get so full because there’s so much great stuff in it like sweet and tender roasted BBQ pork, tender and plump wontons, succulent shrimp and I am in love with the bouncy egg noodles and savory pork broth.

I didn’t have time to make the xá xíu so just bought it at 99 Ranch at the deli. You can also buy at your favorite local Chinese BBQ shop.

Broth Ingredients:
6 quarts water
2 pounds pork neck bones
2 pounds pork ribs
2 pounds chicken bones
2 large yellow onion
12 ounces daikon
1 dried squid
¼ cup @khomarket dried shrimp
2 tablespoons salt, more to taste
2 tablespoons fish sauce
1 piece rock sugar, more to taste

Hoành Thánh Ingredients:
½ pound pork
½ pound shrimp
2 tablespoons oyster sauce
1 tablespoon fish sauce
1 tablespoon grated ginger
1 teaspoon sugar
½ teaspoon black pepper
½ teaspoon sesame oil

Noodle Bowl Ingredients:
Egg Noodles
Hu Tieu Noodles
Xá Xíu, Roasted BBQ Pork
Hoành Thánh , Wonton
Boiled Shrimp
Choy Sum/Bok Choy
Cilantro
Green Onions
Fried Shallots
Fried Garlic
Black Pepper

Steps:

Make Broth – Add all the broth ingredients into a big stock pot and simmer for ~2.5 hours, or until the pork bones are tender. When the pork ribs in the broth are tender, season the pork broth with fish sauce and adjust seasonings in the broth to your desired taste.

Make Wontons – In a medium bowl, mix the Hoành Thánh Ingredients until fully combined. Stuff the wonton wrappers with the filling, and shape the wontons however you like. Steam or boil the wontons until they’re cooked all the way through.

Assemble Noodle Bowls – Load up a soup bowl with cooked egg noodles, wontons, bbq pork, other goodies, and fill it up with comforting broth. Garnish the noodle soup with chopped green onions, cilantro, black pepper, fried shallots, and enjoy.

Tips:

  • There’s different egg noodle options. Pick whatever you like.
  • The toppings options are endless. Use whatever proteins you like.
