
Fabolous always told me the entrée ain’t as good without somethin’ on the side. For this year’s side, I played around with truffle oil and bacon for some of my favorite sides.
For the Roasted Smashed Potatoes, I focused on using bacon for all the flavorings, and for the Roasted Brussels Sprouts, I focused on using truffle oil and salt for all the flavorings. These all turned out delicious, so flavor-packed, and super yummy!

Ingredients:
Roasted Bacon Smashed Potatoes Ingredients:
3 pounds mini medley potatoes, boiled and smashed
6 ounces bacon, chopped
1 teaspoon truffle salt or Kosher salt, more to taste
½ teaspoon of coarse ground pepper
½ teaspoon garlic powder
Parsley, finely chopped for garnish
Roasted Truffle Brussels Sprouts Ingredients:
2 pounds Brussels Sprouts, cleaned and halved
½ cup dried cranberries
1/4 cup truffle oil
1 teaspoon truffle salt or Kosher salt, more to taste
½ teaspoon of coarse ground pepper
½ teaspoon garlic powder
½ cup truffle glaze or balsamic glaze, more to taste
Steps:
Roast Bacon Smashed Potatoes – Boil mini medley potatoes for 25 minutes until tender. Over medium heat, render the bacon fat and crisp up the bacon. Coat the boiled potatoes with rendered bacon fat, smash with the bottom of a cup, and season with salt, pepper, and garlic powder. Roast the potatoes at 400 degrees for about half an hour or until the potatoes are crispy! Top roasted smashed potatoes with bacon and chopped parsley for extra color!
Roast Truffle Brussels Sprouts – In a medium bowl, toss Brussels Sprouts with truffle oil, and season with SPG. Roast the Brussels sprouts at 400 degrees for 30 minutes or until they’re charred and crispy. Toss Brussels Sprouts and dried cranberries in a bowl and drizzle it with truffle glaze.
Tips:
- I think truffle oil would have tasted great with the potatoes and bacon would have been fantastic with the Brussels Sprouts. Change it up as you want!
- Pine nuts or walnuts would have been great additions to the Brussels Sprouts. I left it out because my niece is allergic.
