Roasted Cornish Hens

If you’re not in the mood for turkey or just planning a small Thanksgiving dinner, roasted Cornish Game Hens are an excellent alternative to the traditional Thanksgiving turkey. Although petite in size, it still packs so much flavor and tenderness, and the succulent meat is soo juicy!

Ingredients:
4 Cornish Game Hens, washed and cleaned
Traeger Orange Brine and Turkey Rub Kit, follow instructions
Neutral oil

Stuffing Ingredients:
2 celery stalks, finely chopped
1 green apple, finely chopped
½ green bell pepper, finely chopped
1/2 red bell pepper, finely chopped
½ large yellow onion, finely chopped
4 garlic cloves
1 ounce fresh poultry blend herbs

Steps:

Prepare Cornish Hens – Brine birds for 4 hours. Pat dry each bird, stuff it with the veggie/herb stuffing, and season with Turkey rub.

Roast Cornish Hens – Roast in the oven or grill at 375 degrees until the thickest part of the bird reaches 165 degrees.

Tips:

  • Use your favorite brine or seasonings if you do not have the Traeger Orange Brine and Turkey Rub Kit.
  • The recipe works great on a 5-pound chicken.
  • I roasted in my Traeger Grill, but oven works great as well.
