Seafood Tacos

When mom visits for dinner, I always try to step up my cooking game to impress her. I stepped up my Taco game by grilling Octopus, Shrimp, and Scallop on the Weber for seafood tacos.

I seasoned the seafood with my grilled fish taco seasoning and it came out perfect. The spicy and earthy Mexican spices in the seasoning were sooo good on the light and yummy grilled seafood. After grilling the seafood, I squeezed some fresh lime juice to brighten it up, chopped it up into bite-sized pieces and the taco party was ready.

I also made handmade blue corn tortillas and sweet and spicy mango salsa for the tacos and topped it with microgreens, guacamole, and my favorite green habanero hot sauce. The tacos were incredibly fresh, delicious, and colorful just the way I like it.

Seafood Ingredients:
2 pounds of Seafood (Shrimp, Octopus, and/or Scallop)
2 tablespoons extra virgin olive oil
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon Mexican oregano
1 teaspoon kosher salt, more or less to taste
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 lime (for juice)

Mango Salsa Ingredients:
2 firm mangos, finely diced
1/2 red bell pepper, finely diced
1/4 red onion, finely diced
1 jalapeno, finely diced
1/4 cup fresh cilantro, chopped
1 lime, juiced
1-2 teaspoons agave syrup
1/2 teaspoon salt
1/2 teaspoon black pepper

Extras:
Corn Tortillas
Microgreens
Lime Wedges
Hot Sauce
Cotija Cheese
Guacamole

Steps:

Make Mango Salsa – In a medium bowl, combine all the mango salsa ingredients and mix well. Season to taste with salt and agave syrup. Set aside for at least an hour.

Make Seafood Seasoning – In a small bowl, combine chili powder, cumin, Mexican oregano, kosher salt, onion powder, garlic powder, and black pepper. Mix well and set aside.

Season Seafood – On a baking sheet, rub seafood with extra virgin olive oil and season liberally with the seafood seasoning.

Prepare Grill – Set up the grill and get it ready for medium-high heat direct cooking.

Grill Seafood – Grill the seafood over medium-high heat direct heat for about 3 minutes a side or until you see crispy charred bits on each side of the seafood. After seafood is grilled, squeeze fresh lime juice on top of the seafood.

Prepare Tacos – Top each corn tortilla with a few ounces of seafood and garnish each taco with mango salsa and your favorite taco condiments.

Tips:

  • This seasoning is great on all seafood. Use fish filet for super tasty fish tacos.
  • If you don’t have a grill, you can sear on a skillet over medium-high heat for 3-4 minutes a side.
  • Substitute pineapple for mango if you prefer pineapple salsa.
  • Cooking time is quick but will vary based on how hot your grill is.
