Thor’s Hammer Mexican Style Shredded Beef


I’ve been on the search for a Thor’s Hammer Beef Shank after seeing multiple BBQ foodies post it. After not being able to find it at any local stores, I searched online and found it at wildfork.com. For my first cook, I decided to smoke it in my Traeger using Mesquite wood pellets, and make Mexican Style Shredded Beef!

I love the deep flavor, tender and unique gelatinous texture of the smoked beef shank after the long smoking process. It melts in your mouth and tastes super delicious smoked low and slow in aromatic Mexican spices.

There are so many ways you can enjoy this shredded beef. I made Hard Tacos for the family. What would you make with it?

Ingredients:
6.5 pounds Thor’s Hammer Beef Shank
Carne Asada Meat Seasoning
4 cups beef broth
1 large onion, halved
2 bay leaves
8 garlic cloves
1 tablespoon Mexican oregano, crushed
1 tablespoon cumin
Salt, to taste

Steps:

Prepare Thor’s Hammer Beef Shank – Trim beef shank and season generously with Carne Asada Meat Seasoning. Refrigerate overnight.

Smoke Thor’s Hammer Beef Shank – Set the Pellet Grill to 275 degrees. Smoke the Thor’s Hammer Beef Shank for 5 hours or until the internal temperature reaches 175 degrees. Add the beef shank to a pan with the remaining ingredients, wrap up the pan with aluminum foil, and continue smoking the beef shank until the internal temperature reaches 210 degrees. Rest for 30 minutes and shred the beef.

Tips:

  • This recipe can be made with other beef cuts with lots of connective tissue like chuck roast, beef cheeks, or brisket.
  • Freeze leftovers. To reheat, thaw and heat up.
  • If you can’t find Thor’s Hammer beef shank at the store, search for it online!
