
It’s super cold and we’re gonna get hit with an atmospheric river this week, which means it’s hot pot season while we hang out indoors!
After eating at Mikiya Wagyu Shabu House last month with the Boyz, I was inspired to make some Japanese inspired broths for Shabu Shabu at home with the girls. I went with umami, rich, and savory Miso and Sukiyaki broths. These quick broths were super easy to make. I mixed some dashi powder with water and added the rest of the broth ingredients from there. Broths done within 15 minutes. The girls loved these broths and had fun dipping and cooking all their favorite hot pot proteins, veggies, noodles in it.
Hot pot is super customizable. Mix and match your favorite proteins, veggies, noodles, mushrooms, tofu, and sauces for the ultimate hot pot, lẩu, suki, shabu experience.
Ingredients:
Sukiyaki Broth Ingredients:
4 cups water
1 cup soy sauce
1 cup mirin
1 cup sake
¼ cup sugar
1 tablespoon dashi powder
1 piece ginger
Dried kelp, optional
Miso Broth Ingredients:
8 cups water + 2 tablespoons dashi powder
¼ cup miso paste
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon sugar
1 tablespoon sesame oil
Dried kelp, optiona
Shabu Shabu Ingredients:
Sukiyaki and/or Miso Broth
2 pounds Beef, Pork, Lamb, Thinly sliced
1 pound Shrimp, peeled and deveined
1 pound quail eggs
Chrysanthemum leaves
Napa Cabbage
Enoki
Udon noodles
Bean thread noodles
Steps:
Make Sukiyaki Broth – Add all the Sukiyaki Broth ingredients in a medium stockpot and bring it to a boil. Reduce down to a simmer for 15 minutes. Turn off the heat until and set it aside.
Make Miso Broth – Add all the Miso Broth ingredients in a medium stockpot and bring it to a boil. Reduce down to a simmer for 15 minutes. Turn off the heat until and set it aside.
Prepare Shabu Shabu – Prepare and plate all the proteins, veggies, mushrooms, and noodles, and place on dining table around the stove top. Pour broth into hot pot divider pot and bring it to a boil.
Enjoy Shabu Shabu – When the broths are boiling, cook proteins, veggies, mushrooms, and noodles and enjoy however you like.
Tips:
- Shabu Shabu experience is super customizable. Use whatever proteins, veggies, mushrooms, and noodles you like or have available.
