Chè Chuối (Vietnamese Banana Sweet Soup)

In Episode 2 of No Limit Sweetz, Mrs. No Limit makes my parent’s tried and true Chè Chuối (banana tapioca dessert), one of her all-time favorite Vietnamese desserts. There’s only 3 main ingredients to this dessert: tapioca, coconut cream, and bananas! Love it!

Chè Chuối is a popular Vietnamese dessert made primarily from bananas and tapioca pearls. It typically features ripe bananas that are sliced and cooked with coconut milk. My parents like to add taro or sweet potatoes to give it additional texture and to balance the sweetness of the ripe bananas. Chè Chuối is known for its creamy texture and sweet, rich flavor, and is enjoyed warm or chilled. I personally love it cold.

We didn’t realize how easy it was to make this dessert. The hardest part was converting mom’s a little bit of this and a little bit ingredient measurements to measurements we were comfortable with. I think it turned out very successful. Mrs. No Limit did a great job!

Ingredients:
10-12 Lady finger bananas, boiled
1 can coconut cream
3.5 cups water
3/4 cup sugar
1/2 teaspoon salt
3 tablespoons tapioca pearls, soaked and strained
Roasted unsalted peanuts, crushed

Steps:
Prepare Tapioca Pearls – Soak the tapioca pearls in water for 30 minutes, then drain.

Boil Bananas – Add bananas to boiling water and cook for 5-7 minutes or until the bananas are soft. Set aside.

Make Chè Chuối – Add tapioca pearls to boil water. Reduce the heat down to medium heat. Stirring occasionally, simmer the tapioca pearls for about 12 minutes or until they become translucent. Add sugar and salt and mix until fully dissolved. Stir in 1 can coconut cream and add the boiled bananas. Simmer for another 5-7 minutes until the sauce thickens to your desired consistency. Taste and adjust sweetness if needed.

Tips:

  • Sweetness level of the bananas may vary depending on the banana. Adjust sugar to taste.
  • After cooking, the sauce may look loose, but it will thicken as it cools down.
  • Add Japanese sweet potatoes or taro for extra texture.
  • Substitute 10 lady finger bananas for 6 regular bananas.
