
Over the weekend, I smoked a bunch of meaty, tender, and delicious Dino Ribs to celebrate my little sister’s birthday with our family and cousins. I’ve been dying to smoke Dino Ribs for a while so I was super excited for this smoke session. Dino Ribs are my favorite meat to smoke!
Dino Ribs usually refer to large, beef short ribs, known for its huge size. I usually get 3-bone beef ribs but the local Costco Business sold 4-bone beef ribs that I wanted to try out. It wasn’t as ginormous and grand-looking as the 3-bone but was still super tender and delicious.
Ingredients:
1-2 Bone-In Beef Short Ribs, trimmed
1/4 cup coarse black pepper, plus more to taste
2 tablespoons @redboatfishsauce Salt, or kosher salt
2 tablespoons granulated garlic
2 tablespoons paprika
Beef broth, for spritzing as needed
Beef Tallow, for wrapping
Steps:
Prepare Beef Short Ribs – Season trimmed bone-in beef short ribs liberally with beef seasoning.
Smoke Beef Short Ribs – Setup the grill/smoker to 250 degrees. Smoke the bone-in beef short ribs at 250 degrees until the internal temp of short ribs reach 190 degrees. Monitor the beef short ribs after the 3 hour mark and spritz with beef broth every hour as needed. Wrap beef short Ribs in beef tallow and beef broth and smoke for another hour or until the internal temp of the ribs reaches 200 degrees. Rest for at least 1-2 hours before slicing and serving.
Tips:
- This recipe works great with beef back ribs.
- I love smoking using oak or hickory for beef ribs.
- I love to go extra heavy-handed on the pepper on large pieces of meat.
