Bánh Chuối Hấp (Steamed Banana Cake)

Bananas are her favorite Vietnamese dessert ingredient so Bánh Chuối Hấp like what she grew up eating in Vietnam was first on the list!

Bánh Chuối Hấp, Steamed Banana Cake, is a popular Vietnamese street sweet treat known for its unique jiggly mochi like texture and sweet, fragrant flavor. If you’re a banana lover you would love this!

Steamed Banana Cake Ingredients:
6 bananas, thinly sliced
1.5 cups tapioca starch
1 can coconut cream
4 drops yellow food coloring
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup water, more as needed
Roasted peanuts, crushed

Coconut Sauce Ingredients:
1 can coconut cream
1 cup water
2 tablespoons sugar
2/3 teaspoon salt
1 tablespoon tapioca pearls
2/3 tablespoon tapioca flour plus 1/2 tablespoon water, for thickener

Steps:

Prepare Batter – Add bananas, sugar, and salt to a medium bowl. Mix ingredients in the bowl for about five minutes until the bananas reach a viscous consistency. Add tapioca flour and water to the meidum bowl, and mix a few times. Add additional water, 1 tablespoon at a time, as needed until the consistency is a little sticky. Add 3 drops yellow color and give everything a final mix. Pour banana batter into a 9-inch round pan and cover with plastic wrap.

Steam Banana Cake – Steam banana cake in a steamer for 30 minutes or until toothpick comes out clean from the center of the cake. Rest the steamed banana cake for at least 1 hour before cutting.

Make Coconut Sauce – Add coconut cream, water, and tapioca pearls to a small saucepan and cook over medium heat until the pearls are clear. Add sugar, and bring to a boil. Add the thickener slowly and stir for about 2 minutes until the sauce reaches desired consistency.

Assemble Steamed Banana Cake – Add sliced steamed banana cake to a plate. Add crush roasted peanuts and coconut sauce and enjoy.

Tips:

  • While mixing the bananas, it’s okay for it to break a little
  • Oil the knife prior to cutting to prevent sticking.
  • Substitute 10 Thai bananas for 6 regular bananas
