Súp Nui Sườn Heo

I normally make my pork broth with onion, ginger, and daikon, but today was “make a broth with whatever veggies I had in my fridge” day and I made it with onion, ginger, carrots, celery, and fuji apples, and made Súp Nui Sườn Heo, Vietnamese Macaroni Soup with Pork Ribs. I added pork/shrimp meatballs inspired by @nuocmamafoods and potatoes I had hanging out on my kitchen counter.

I loved the natural sweetness of the broth from the apples and the carrots that were simmering for a few hours in my stockpot. I barely had to use any rock sugar. I seasoned the broth and meatballs with @sonfishsauce that I won in @phodaculture ‘s Son Fish Sauce Variety Pack Giveaway. It was so good! I also added the chili garlic sauce as a condiment and it was super spicy and tasty as well.

This hearty Súp Nui Sườn Heo is super comforting and versatile. Add whatever veggies you like or pasta you like and it should be delish. So colorful, nutritious, and delicious.

Ingredients:
3-4 quarts water
1 package large seashell macaroni
2 pounds pork ribs, cut into bite-sized pieces
2 pounds pork and shrimp meatballs
2 large carrots, peeled and chopped
4 potatoes, peeled and quartered
2-3 celery stalks
1 yellow onion
1 knob ginger
1 fuji apple
¼ cup fish sauce, season to taste
1 tablespoon salt, season to taste
1 small piece rock sugar

Pork and Shrimp Meatball Ingredients:
1 pound ground pork
1 pound ground shrimp
2 green onions, finely chopped
2 garlic cloves, finely minced
2 tablespoons fish sauce
1 teaspoon black pepper
½ teaspoon sugar

Toppings and Garnishes
Green Onions, chopped
Cilantro, chopped
Lime
Black pepper
Fried shallots
Chili Garlic Sauce

Steps:

Make Pork and Shrimp Meatballs — Add pork and shrimp meatball ingredients into a medium bowl. Mix until fully combined.

Make Broth – Add water to a pot and bring to a boil. Add veggies, fruit, parboiled pork ribs, rock sugar, and salt and simmer for 2 hours until the pork ribs are tender.

Finish Broth – Strained broth, form balls with pork and shrimp meatballs and add pork and shrimp meatballs, potatoes, and carrots and cook until tender. Season to taste with fish sauce and extra salt as needed.

Assemble Sup Nui Bowls – Add ~5-6 ounces of macaroni to a large soup bowl. Top with chopped green onions and green onions. Ladle in 3 cups of boiling broth with whatever proteins and veggies into the bowl that you want. Top the bowls with fresh herbs, veggies, and additional garnishes.

Tips:

  • If you’re short on time, use your favorite chicken broth.
  • Use any type of macaroni or pasta you like.
